Homemade Oil-Free Pesto
1/4 cup basil leaves
2 tbsp unsalted cashews
2 garlic cloves
2-4 tbsp water (start with 2)
Pinch of garlic salt
Pinch of sea salt and cracked pepper
Add all ingredients in a food processor (I use a Ninja blender) and add more water if needed. I have used this pesto in not only this pizza, but also in quinoa and rice, on top of chicken and pork, or mixed with steamed veggies! It's rich and garlicy just like regular pesto, but not greasy or filled with a ton of fat.
Cauliflower Crust Pizza: 2 ways!
Trader Joe's Frozen Cauliflower Crust
2-4 tbsp Homemade Oil Free Pesto (recipe above)
1/4 cup no sugar added Marinara Sauce
2 Chicken Sausage Links
1/2 cup chopped Broccoli
1 cup raw Spinach
4-5 extra Basil Leaves
2 tbsp Nutritional Yeast
Salt, pepper, oregano, red pepper flakes
2 tbsp goat cheese (optional)
First half of pizza: (1/2 of pizza = 1 serving)
Bake crust according to directions on package. Let it cool for a couple minutes, then add toppings.
Top with marinara, 1 sliced chicken sausage link, steamed broccoli slices, chopped basil, oregano, salt and pepper. Broil in oven for 4-5 minutes. Sprinkle 2 tbsp of nutritional yeast over the top. Nutritional yeast gives it a cheesy taste, without the fat and with some added protein!
Other half of pizza:
After crust is baked and cooled, top with homemade pesto, the other sliced chicken sausage link, steamed spinach, chopped basil, salt, pepper and red pepper flakes. Broil for 4-5 minutes. Top with sprinkled goat cheese.
Regarding frozen cauliflower crusts, I've only tried the Trader Joe's brand, but I 100% recommend it! It holds up really well to the ingredients on top and you can eat it without a fork and knife. The marinara made it more soggy than the pesto, so go light on the sauce.
These are just 2 healthy ways to make the pizza, but play around with different vegetables and meats to top it with. Some other toppings I think would be great are:
Roasted white onions
Shredded BBQ chicken
Almond milk shredded cheese
