Same veggies, same old taste. Nope, not anymore. This italian bake will revamp your love for veggies just by putting a little twist on a regular roasted vegetable dish.
Ingredients:(Makes 2 servings: about 300 calories per serving)
1/4 cup chopped red onion
2 cloves garlic
1/2 cup red pepper
1/2 cup sliced zucchini
8 oz. of your meat of choice
--> Good options: 98% lean ground beef, chicken sausage, chicken breast, turkey sausage
1/2 cup diced tomatoes
1/4 cup marinara sauce
Garlic salt, regular salt, pepper, and crushed red pepper to taste (up to you how much!)
2 cups cauliflower
Turn your broiler on to high heat. Then, heat sauté pan and spray with olive oil spray (this has zero calories, but still does the same job as regular olive oil does!). Add chopped red onion to pan and cook for 2-3 minutes. Chop garlic cloves and add those to the pan. Once these two ingredients are cooked for another 2-3 minutes, add sliced red pepper and sliced zucchini. You may need to spray the pan again with olive oil spray so that the veggies don't stick to the pan.
You can either cook your meat in a different pan, or simply add it to the veggie mix to cook it. Make sure you cut up the meat into pieces before adding to sauté pan. Once all the ingredients are just about finished, add the diced tomatoes, marinara, and spices. Mix everything around and it should be good to go.
Steam the cauliflower in the microwave for only 2 minutes just to cook them half-way. Once this is done, add them to a small baking dish and pour the ingredients in the sauté pan over the cauliflower evenly. Put the dish in the oven, and broil for about 4-5 minutes.
Remember: You can always substitute certain vegetables for others, as it is all based on preference. I think sliced eggplant could be added in, or you could switch broccoli for cauliflower. You can also put a little something extra on top like grated parmesan cheese, or peperoncini to spice it up even more!
