If you've been craving deep fried foods like chips or fries, or you're just looking for a new side dish, these Parmesan Zucchini Chips will do the job perfectly. You can either fry them up on a sauté pan with a little oil, or bake them in the oven. Either way, they are a healthier version of classic American fried side-dishes that we all hate to love. Did I mention that I think they are just as satisfying, if not MORE satisfying than deep fried foods?? Well it's true, so try them out for yourself!
Parmesan Zucchini Chips
2 medium zucchinis
1/4 cup flour
1/2 cup Panko
1/2 cup low-fat parmesan cheese
2 tbsp oil (any type- olive, vegetable, canola)
2 tbsp light mayo
2 tbsp 75% sugar-free ketchup
Sriracha- depends on how spicy you like it!
Chop the two zucchinis into thin-sliced rounds. Put the flour in a small bowl. Beat an egg in a separate bowl. Mix the cheese and Panko in a third bowl.
For each slice of zucchini, dip both sides in the flour, then in the egg, and then coat it in the cheese and Panko mixture. Set aside until all slices are done. In a medium sauté pan, heat up 1 tablespoon of oil and make sure the oil is spread around the pan. Put half of the slices (approximately 1 zucchini worth) on the hot pan. After about 3-4 minutes, turn each of them over and cook for the same time. Place this batch on a plate with paper towels so that some of the oil can be absorbed. Heat another tablespoon of oil and do the same steps for the next batch.
While they were cooking in the pan, I mixed up all the ingredients for the Sriracha Aioli, and within less than 15 minutes this whole side dish was done!
I served my zucchini chips as a side for turkey burgers, but I could see them pairing up great with any type of grilled meat. They can even be served as an appetizer!
If you are not a fan of aioli, I recommend dipping them in light ranch, ketchup, or simply eat them alone. They have enough flavor to not need a dipping sauce.
