So it's snowing again and that obviously means winter is not over yet. *Cue depressing music* BUT there's something that can help with this sad realization: warm, hearty, comforting chili!
I have an amazing recipe for you to make this week and enjoy it through these long, cold days. It is cooked in a Crock Pot for 6 hours to slowly combine all the flavors harmoniously.
It has heartiness from the meat, quinoa and beans, sweetness from the sweet potatoes, and spiciness from the cumin, paprika and chili powder. It makes 6-7 servings, so prepare it on Sunday and enjoy it all week long!
1 lb 93% lean ground turkey
1 white onion
3 cloves garlic
1 tbsp olive oil
3 large sweet potatoes
1/2 cup dry quinoa
1 can black beans, rinsed and drained
1 can diced tomatoes
1 can stewed tomatoes
3 cups chicken stock
1/2 tbsp cumin
1/2 tbsp paprika
Salt and pepper
Sauté turkey with olive oil, chopped white onion and minced garlic. Cook until browned and there is no more pink in the meat. Add this to the slow cooker. Chop the sweet potatoes into 1/2-1 inch cubes and add to slow cooker with all other ingredients. Mix everything.
Cook on low for 6 hours, or on high for 4 hours. You will know it's done when the quinoa is cooked and sweet potatoes are soft.
Great additional toppings: dollop of greek yogurt, 1/4 avocado sliced, chopped green onions or red pepper flakes.
